Get out of the salad rut!

Salads are perfect for any time of year, but in the heat of the summer, many of us crave a refreshing, no-cook, nourishing salad. It’s easy to fall into the same old routine when it comes to salad - romaine, tomato, cucumber, dressing. While there’s nothing at all wrong with this traditional combo, summer is the time to hit the market and take advantage of brightly colored vegetables, fruits, nuts, seeds, and oh yes, greens! Intimidated and overwhelmed by too many choices? Don’t be. Think outside of the typical salad box. Start with a small amount of greens, or even no greens at all. There are no rules! Add a grain if you choose, such as a scoop of quinoa or rice. Try beans for plant based protein, such as chickpeas, edamame or black beans. Add farmer’s market fresh vegetables, like raw corn sliced off the cob, chopped heirloom tomatoes, cucumbers, artichoke, asparagus tips, radishes or bell peppers, just to name a few. Fruit, such as blueberries, peaches or orange sections can add sweetness. A sprinkling of nuts and seeds, like walnuts, pecans, pumpkin or sunflower seeds add texture and crunch. A small amount of sharp cheese, like blue or goat cheese, give it punch. Olives or avocado offer flavor and satiating power.  Finish with a drizzle of olive oil and a squeeze of lemon, or your favorite vinaigrette. Want a boost of protein? Top with chicken, steak, pork, seafood, tofu, or beans. Add a piece of crusty bread for extra deliciousness. Make use of leftovers and try different combinations for delicious variety and health promoting nutrients. And remember that the possibilities are endless!
